Preheat your oven to 200°C/180°C fan/gas mark 6.

Using a sharp knife, trim the top off the garlic bulb (1 bulb) to expose the cloves. Place this onto a square of foil. Pour 1 tbsp of olive oil over the garlic and sprinkle over half the thyme leaves (1 1/2 sprigs). Season with salt and pepper and then scrunch up the foil around the garlic bulb. Bake in the oven for 45 minutes, until the garlic cloves are soft. Remove from the oven and allow to cool.

Squeeze the flesh from the garlic skins into a small bowl and mash with a fork to a smooth paste. Add the butter (80 g), 1 tbsp of olive oil, the remaining thyme leaves (1 1/2 sprigs) and parsley (10 g). Season with salt and pepper and mix well. Spread this liberally over each half of ciabatta (1 pack) and pop into the oven for 12-15 minutes or until golden brown.

Meanwhile, heat a large frying pan over medium-high heat with a glug of olive oil. Add half the sliced garlic (6 cloves), and cook for 2-3 minutes, until they turn a light golden brown. Quickly remove with a slotted spoon and drain on a plate lined with a kitchen towel.

Add the butter (50 g) and the remaining sliced garlic (6 cloves) to the pan. Cook the garlic for 2 minutes over a medium heat. Stir in the red chilli (1) and paprika (1 tsp) and then add the prawns (2 packs). Season with salt, and cook until pink. Stir in the sherry (80 ml) and let it bubble for 1 minute, then remove the pan from the heat.

Remove the ciabatta from the oven and cut each half into 2-inch slices. Spoon the prawns into 2 serving bowls and sprinkle with the garlic chips and parsley (10 g). Serve the garlic toasts alongside for dipping.
