Preheat the grill to high. Spread the lentils (1 pouch) out on a foil-lined baking tray. Stir through 1 tbsp of the dressing (1 tbsp). Grill for 8-10 minutes, tossing regularly, until crisp.

When the lentils are almost done, stir in the nuts (75 g) and seeds (2 tbsp) and grill for the last 3 minutes, until the nuts smell toasty. Keep your eye on these, as they may turn quickly!

Combine the broccoli (1 head), jalapeño (1), dates (6), mint (1 handful) and coriander (1 handful) in a large bowl with the remaining dressing (4 tbsp) and a pinch of salt. Stir in the crispy lentils and seeds. Squeeze over the juice of one of the limes (1) and drizzle with extra virgin olive oil (2 tbsp).
