Add the cabbage (1/4), carrots (3), edamame beans (200 g) and coriander (30 g) to a mixing bowl with the soy, ginger and miso dressing (8 tbsp) and lime juice (1). Season with a pinch of salt and leave to infuse.

Preheat the oven to 200°C/180°C fan/gas mark 6. Add the chicken lollipops (1 pack) to a baking tray and cook for 40 minutes, according to packaging instructions.

Add the noodles (180 g) to a large bowl and cover with boiling water. Set aside for 5 minutes, then drain and rinse under cold water.

Toss the cooled noodles into the veggies and dressing, then leave to one side until you’re ready to serve.

Serve the chicken lollipops on top of the noodles, with a scattering of roasted peanuts (1 tbsp), if you’d like.
