Preheat the oven to 220°C/200°C fan/gas mark 7. Cut the flatbreads (1 pack) into triangles, pop onto a lined baking tray, drizzle with olive oil, and sprinkle over the shawarma seasoning (1 tbsp). Bake for 15-20 minutes, until golden.

Add the chickpeas (1 jar), their liquid and 200ml of water to a saucepan and bring to a boil. Add the bicarbonate of soda (1/2 tsp) and simmer for 5 minutes, until the chickpeas are really soft, and the skins are falling off. Drain the chickpeas.

To a blender, add the chickpeas, lemon juice (2), minced garlic (1 clove), ½ tsp salt, tahini (100 ml), cumin (1/2 tsp) and olive oil (1 tbsp). Blitz on high until completely smooth. Scrape down the sides and add in 2-3 tbsp of ice-cold water (2 tbsp), and blitz again until smooth.

Serve the hummus in bowls, topped with the za'atar (to taste) and a drizzle of olive oil.
