Heat 1 tbsp olive oil in a large frying pan on a medium-high heat. Add the chopped garlic (1 tsp), harissa (2 tbsp) and paprika (1 tsp), and cook for 2 minutes.

Stir in the passata (1 jar), honey (1 tsp) and 100ml of water, then simmer for 20 minutes, until thickened and reduced. Season to taste with salt and black pepper.

Stir in the chargrilled vegetables (150 g), then gently stir in the falafel (2 packs). Simmer for another 10 minutes, or until the falafel are piping hot.

Serve alongside the couscous (450 g), topped with a dollop of labneh (as needed), and a sprinkling of parsley (15 g) and toasted almonds (1 handful).
