Place the tomatoes (800 g), onion (1), garlic (4 cloves), butter (25 g), vinegar (2 tsp), sugar (1 tsp) and tomato paste (1 tbsp) in a large, deep frying pan and add a generous sprinkle of salt. Bring to a gentle bubble, then turn down to a simmer and cook for 15-20 minutes.

Meanwhile, boil the pasta (400 g) in a pan of generously salted boiling water.

Remove the onion from the sauce and discard. Tear the basil leaves (1 handful) into the sauce, reserving a handful to garnish. Taste the sauce, adding more vinegar, salt or sugar as required.

Use a spider to toss the pasta through the tomato sauce. Serve with a little more fresh basil on top and a drizzle of extra virgin olive oil, or a bit of parmesan if you’d like.
