Preheat the oven to 200°C/180°C fan/gas mark 6. Line a large baking tray with greaseproof paper. Toss the cauliflower (1) in 1 tbsp olive oil and the fajita seasoning (2 tbsp), add to the lined baking tray and roast for 25-30 minutes, until soft and golden.

Meanwhile, add the drained beans (400 g) to a saucepan on a medium-high heat, with the turmeric (1/4 tsp), garlic (1 tsp), paprika (1 tsp) and 50ml water. Simmer for 5 minutes, until softened and reduced.

Mash with a potato masher or the back of a fork until almost smooth, but still with some texture to it. Season to taste with plenty of salt and pepper and loosen with a splash of water, if it’s too dry.

Load the tortillas (4) with the mashed beans, followed by the roasted cauliflower, salsa (as needed), pickled onions (as needed), a dollop of yogurt (4 tbsp) and a scattering of coriander (25 g), if you wish.
