Preheat the oven to 180°C/160°C Fan/gas mark 4. Rub the potato halves (3) all over with half the oil (1 tbsp) and butter (1 tbsp). Scatter the carrots (240 g) in the bottom of a large roasting tin and drizzle with the remaining oil.

Nestle the beef (1) on top of the carrots and place the potatoes around the edge. Roast according to pack instructions and depending on how you like the beef cooked. Baste the beef and potatoes with the juices 2-3 times throughout.

Once cooked, remove the beef and cover with foil to rest. Stir the cabbage (1/2) into the tin and place back in the oven for 10-15 mins.

Place the beef back in the middle of the tin to serve along with the veggies and the juices from the tin.
