Tip the butter (100 g), garlic (3 cloves), parsley (25 g) and seasoning into a small food processor and blend until combined.

Lay a chicken breast (570 g) on a chopping board and use a sharp knife to make a deep pocket inside the breast. Repeat with the two other chicken breasts.

Spoon a little herb butter into each pocket (you’ll have some leftover to use later), leaving a little border of flesh so that the pocket seals shut. Gently press to flatten and reseal. Transfer to a lined baking sheet and place in the fridge.

Meanwhile, lay out 3 shallow bowls. Beat the eggs (3) in one, mix the flour (100 g) and paprika (1 tsp) with seasoning in the second, and the panko breadcrumbs (100 g) and parmesan (50 g) in the third.

Preheat the oven to 180°C fan. Remove the chicken breasts from the fridge. Roll each breast in the flour, then the egg and finally the breadcrumbs, repeating the egg and breadcrumb stage so that each Kyiv has a double coating. Transfer to a lined baking tray.

Heat 2cm of vegetable oil (as needed) in a large frying pan over a medium-high heat to 180°C. Fry the Kyivs for 2-3 minutes each side until golden – you may need to do this in batches. Transfer to a lined baking tray and cook in the oven for 10-15 minutes until cooked through.

Meanwhile, bring a large saucepan of salted water to the boil. Add the broccoli (350 g), cover and reduce the heat to a simmer. Cook for 3-4 minutes or until you can pierce the stem easily with a sharp knife.

Meanwhile, whisk 3 tablespoons of olive oil (3 tbsp) and lemon juice (1) together in a medium bowl. Season and stir in the chopped hazelnuts (25 g).

Drain the broccoli and tip into the bowl with the dressing. Toss the broccoli to coat in the dressing. Set aside.

Heat the remaining herb butter with the remaining olive oil (1 tbsp) in a large frying pan until foaming. Add the cabbage (1) and cook for 3-4 minutes until softened. Season and remove from the heat.

Cook the mash (1 pack) according to pack instructions and stir through most of the cabbage.

Put the cabbage mash in the centre of the plates, top with the Kyiv, broccoli and remaining cabbage.
