Beat the eggs (6) in a bowl and season with salt and pepper. Stir in the cheddar (30 g). Heat a splash of oil in a non-stick frying pan on medium heat and add the eggs. Cook for 1-3 minutes, until only just set, leaving them a little underdone (they’ll finish cooking in the pitta).

Stir the spinach (1 handful), spring onions (4) and tomatoes (4) into the eggs.

Carefully halve each pitta (4) to make pockets. Stuff each pitta with the egg mix.

Heat a splash of oil in a griddle pan to medium and fry the pittas for 2-3 minutes on each side, until the pittas are golden brown.

Serve with the dip (1 tub) on the side.
