Preheat the oven to 180°C fan. Arrange the gnocchi (1 pack) and tomatoes (300 g) on a large baking tray. Slice the courgettes (400 g) in half lengthways, trimming the ends. Slice the spring onion (1 bunch) and add these with the courgettes to the tray with the gnocchi.

Dot over the butter (2 tbsp) and drizzle over the olive oil (2 tbsp). Season with salt and pepper. Bake for 20 minutes, until the tomatoes have broken down and the courgettes are golden.

Meanwhile, combine the breadcrumbs (2 tbsp), chilli flakes (1/2 tsp) and grated parmesan (25 g) in a bowl.

Remove the gnocchi from the oven and give it a good stir. Tip over the cheesy breadcrumb mix and return to the oven for a further 10 minutes, until the gnocchi and courgettes are crisp and the breadcrumbs are golden.
