Preheat the grill to medium.

Melt the butter (1 tbsp) in a small saucepan over a medium heat. Add the flour (1 tbsp) and stir.

Slowly pour in the milk (150 ml) while continuously whisking to create a smooth sauce. Turn down the heat and allow to cook gently for another minute. Take off the heat and grate in half the truffle gouda (20 g).

Slice the remaining truffle gouda (20 g) and the gruyere (20 g). Divide the cheeses between the two slices of sourdough (4 slices), placing them on top, then add a slice of ham (2 slices) to each slice. Place on a baking tray and grill until melted.

Top each slice with another piece of sourdough and spoon over the cheesy truffle bechamel sauce. Return to the grill and cook until bubbling and golden brown.
