step 1
Preheat oven to 180c. Cut the M&S Remarksable Value red peppers (4) in half and remove the seeds and core. Set aside a quarter to garnish. Place on a lined baking tray, drizzle with olive oil (1 tbsp) and sprinkle over the fennel seeds (2 tsp). Season with salt and pepper and roast for 30 minutes, turning half way through, or until softened and lightly charred. Once cool enough to handle, peel the peppers and set aside to cool completely.

Add the roasted peppers, M&S British rosa vine tomatoes (2 packs), M&S spring onions (2), cucumber (1) (reserving a little to garnish), M&S Remarksable Value garlic (2 cloves), M&S sherry vinegar (1 tbsp) and half the basil (1/2 handful) to a blender. Blend until smooth and season to taste.

Chill the gazpacho in the fridge for a few hours to allow the flavours to really develop.

Pour the gazpacho into bowls and garnish with the reserved pepper, cucumber, basil (1/2 handful), M&S sea salt and black pepper croutons (1 pack) and a drizzle of olive oil.
