Preheat the oven to 120°C fan and line a baking tray with greaseproof paper.

Blitz the M&S multigrain porridge oats (100 g), M&S free-range mixed size eggs (3), M&S Remarksable Value full fat natural cottage cheese (200 g), baking powder (1 tsp), ground cinnamon (1/2 tsp), vanilla extract (1 tsp) and M&S Remarksable Value plain flour (25 g) in a food processor until completely smooth. Fold in the M&S Remarksable Value carrot (1) and raisins (40 g).

Heat ½ tsp M&S Collection Farmhouse British butter (1 knob) and a splash of sunflower oil in a large non-stick frying pan over a medium heat. Spoon 3 tbsp of the batter into the pan in three blobs. Cook for 2-3 minutes, until bubbles form on top and the pancakes are browned on one side, before flipping. Cook for a further 2 minutes on the other side.

Remove from the pan and keep the pancakes warm in the tray in the oven while you cook the rest in batches, adding more butter and oil to the pan as required.

Serve with M&S High Protein vanilla yogurt (1 pot), a drizzle of maple syrup (as needed) and a handful blueberries (as needed), if you like.
