Preheat the oven to 180°C fan.

Heat the apples (100 g), sugar (75 g), vanilla (1) (scraped), cinnamon (1/4 tsp) and lemon (1) juice in a small saucepan over a medium heat and bring to a simmer. Cook for 2-3 minutes on a gentle heat and then add the cherries (250 g) and cook for a further 5 minutes or until the cherries have softened.

In a small bowl mix the cornflour (1 1/2 tbsp) with 50ml of water (50 ml) and pour into the pan, stir well and cook until thickened. Remove the pan from the heat and transfer the cherry filling to tray and leave to cool.

Roll out the pastry (1 pack) and lay it on a lightly floured surface. Use a rolling pin to make the pastry a little thinner. Cut the pastry down the middle lengthways and then cut each strip into 3 evenly sized squares.

Place the puff pastry into the freezer for a few minutes to firm up.

Spoon the filling onto one half of each square and brush the outer edges with the egg (1). Fold one side of pastry over the cherry filling and press down the edges with a fork to seal.

Add the parcels to a lined tray and place in the freezer for 10 minutes or until firm.

Remove the parcels from the freezer and use a sharp knife to trim any uneven edges. Brush each parcel with egg wash and sprinkle evenly with sugar (1 tbsp). Make 2 or 3 small slits on the top of each pie. Bake in the oven for 20-25 minutes or until deep golden brown and crisp.

Serve warm with a scoop of ice cream (as needed), if you like.
