In a large saucepan, add the onion (1) and ginger pieces (2 in) and cook over a medium heat for a few minutes, stirring occasionally.

Add the stock (750 ml), water (250 ml), fish sauce (1 tbsp), soy sauce (1 tbsp), hoisin sauce (1 tsp), star anise (2), cinnamon stick (1) and clove (4) to the pot, season and bring to the boil. Once boiling, reduce the heat and simmer for 30 minutes.

While the broth is cooking, prepare the noodles (180 g) according to the packet instructions. Once ready, drain, rinse and set aside.

Prepare your M&S spring onions (2), red chilli (1), coriander (1 handful), beansprouts (1 handful), basil (1 handful), lime (1), sriracha (to taste) and divide onto individual plates or into bowls.

Five minutes before your broth is ready, remove the onion, ginger, clove and cinnamon stick and add in the turkey (200 g) to warm through.

Divide the noodles between two bowls, ladle the broth on top and garnish as you like it.
