step 1
Preheat a roasting tray in the oven at 210°C/190°C fan for 20 minutes.

Peel and halve the Maris Piper potatoes (1.2 kg) and bring a pan of salted water to the boil.

Simmer the potatoes for around 15 minutes, until totally cooked through. Gently remove from the pan with a slotted spoon and leave to steam-dry on a wire rack.

Add a generous amount of vegetable oil (2 tbsp) to the preheated tray. Add the potatoes, but don’t pack too tightly – this creates steam, which makes it harder to achieve a crisp texture.

Roast for 20-25 minutes, then remove from the oven and turn over, adding a splash more oil or fat if needed. Add herbs such as rosemary (1 handful), bay leaves, sage and thyme, plus a whole bulb of M&S Remarksable Value garlic (1), if you like. Roast for a further 20-25 minutes – potato perfection!
