Drizzle the sourdough pieces (4 slices) with a little olive oil (to taste), then place on a lined baking sheet and pop under the grill – toast on a medium heat for 2-3 minutes, or until browned. Remove from the oven and turn over.

Top each piece with a slice of truffle brie (1), then scatter over a few fresh thyme leaves (1 handful). Place back under the grill until bubbling. Finish with a drizzle of honey (to taste).
