Heat the oven to 200°C/180°C fan/gas mark 6. Slice any of the larger tomatoes (600 g) in half. Toss the tomatoes with 2 tbsp olive oil, the garlic (1/4 head) and the balsamic vinegar (1 tbsp). Spread out in a roasting tin so the tomatoes are in a single layer and season generously with salt and pepper. Roast for 20-25 minutes, or until the tomatoes are beginning to collapse but still holding their shape.

Spoon the tomatoes onto a large sharing plate, top with the torn mozzarella (2 pieces) or burrata, the basil (1 handful) and a drizzle of olive oil. Serve with focaccia (1 loaf) or crusty bread to mop up the juices.
