Reserve 8 blackberries (2 punnets) and lightly crush the remainder in a bowl with the back of a fork.

Divide half of the crushed blackberries into 4 sundae glasses or small bowls, top with the diced peaches (4) then add the remaining blackberry crush.

Lightly whip the double cream (1 pot) into soft peaks.

Add a generous scoop of vanilla ice-cream (1 tub) to the sundae glass along with a dollop of whipped cream, the crumbled ginger snaps (4), reserved blackberries. Finally top with Percy sprinkles (to taste).
