Grown exclusively on the island of Jersey, these brilliant British veggies have a nutty flavour and beautifully buttery texture thanks to the island’s mild climate and rich, fertile earth. Since Jersey Royals have a ‘Protected Designation of Origin’ status, they can only be grown using carefully controlled, traditional methods, with crops planted and harvested by hand, and seaweed used as a fertiliser.
They’re delicious simply steamed and dressed with soft herbs (mint, dill and parsley work well).
Showcase brilliant British Jersey Royals in this Swedish-inspired recipe, where the potatoes are thinly sliced, allowing for more surface area so that they go super crispy and golden.
Preheat the oven to 200°C/180°C fan/gas mark 6. Slice 400g Jersey Royals thinly, but not all the way through, at about 3mm intervals. Place in a baking tin over the hob and add 5 tbsp of olive oil and 45g butter, then turn up the heat until it melts. Toss the potatoes in the fat, spooning it over. Sprinkle with salt, add a handful of fresh rosemary and bake for around 40-50 minutes until golden brown. Finish with flaky sea salt.
