Preheat the oven to 200°C/180°C fan/gas mark 6.

Bring a small saucepan of water to the boil then reduce to a simmer. Boil the eggs (2) for 8 minutes, then plunge into cold water and set aside.

Dissolve the flavour pot (1) in 150ml boiling water.

Heat a splash of oil in an ovenproof dish and add the frozen petit pois, peas and leeks (500 g). Sauté for 3-4 minutes until defrosted, then stir in the stock, crème fraîche (200 ml), capers (1 tbsp), chives (10 g) and lemon zest (1). Remove from the heat. Season to taste with salt and pepper.

Arrange the smoked haddock fillets (2) and cod fillets (2) on top, breaking up slightly to cover the pan.

Peel and halve the eggs then arrange these on top too.

Brush the filo sheets (6 sheets) with a little olive oil then scrunch them and place on top of the pie (don’t worry if it’s scruffy!). Brush the top with a bit more oil.

Place in the oven and bake for 35-40 minutes, until the pastry is golden and cooked through.

Serve your favourite vegetable side, such as lemon-dressed green beans or Tenderstem broccoli.
