Preheat the oven to 190°C/170°C fan/gas mark 6. Arrange the butternut squash (400 g) on a large baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 10 minutes.

Remove from the oven and place the chicken breasts (4) on top. Slice one of the lemons (1) and arrange this in the tray. Season with salt and pepper and sprinkle everything with the ras el hanout (1 tbsp). Drizzle with a little olive oil then roast for a further 15-20 minutes, until the chicken is cooked through.

Meanwhile, to make the green tahini sauce, combine the tahini (75 g), the juice from the remaining lemon (1), coriander (25 g), parsley (25 g) and garlic (2 cloves) in a food processor with 1 tsp salt and 50ml water. Blitz until smooth and well combined. Taste to check you’re happy with the seasoning and acidity levels.

When the chicken and veg are almost done, heat the grains (2 packs) in the microwave according to the pack instructions.

Serve the chicken with the grains, roasted sweet potato and butternut, and the green tahini sauce drizzled on top.
