Preheat the oven to 200°C/180°C fan/gas mark 6. Cut each of the tacos (1 pack) into 6 triangles and arrange on a flat baking sheet. Brush with a little olive oil. Bake for 10 minutes, stirring halfway, until golden brown and crisp.

Meanwhile, make the salsa. Heat a griddle pan over a high heat. Peel the onion (1) and cut it in half. Halve the tomatoes (300 g). Add the onions, tomatoes, jalapeño (1) and unpeeled garlic cloves (3 cloves) and cook, turning occasionally, until deeply charred.

Remove the garlic from its skin and roughly chop the jalapeno, discarding the stalk. Add to a food processor along with the onion, tomatoes and chipotle paste (1 tsp). Blitz until smooth.

Squeeze in the juice from one of the limes (1). Season to taste with salt and pepper.

Heat the beans (1 tin) in a saucepan over a medium heat according to the pack instructions.

Fry the eggs (4) in a non-stick pan to your liking and season with salt and pepper.

Briefly toss the tortillas in the red salsa and spoon into bowls. Top with the fried eggs, refried beans, crumbled feta (100 g), avocado (1) and fresh coriander (1 handful). Serve with the remaining lime (1), cut into wedges.
