Put 8 of the eggs (8) into a pan of cold water and bring to a boil. Boil for 4 minutes, then transfer to a bowl of cold water to cool slightly before carefully peeling.

Squeeze the sausage meat (12) out of its skins and place in a mixing bowl. Add the chopped parsley (15 g), mustard (1 tbsp), all-purpose seasoning (1 tsp) and a pinch of ground black pepper. Mix well and divide into 8 balls.

Beat the remaining eggs (2) and add to a shallow bowl. Add the flour (100 g) to another, and the breadcrumbs (150 g) to a third bowl.

With lightly floured hands, take one sausage meatball at a time and flatten in the palm of your hand into an oval shape. Place one of the peeled eggs into the center and gently shape the sausage meat around the egg until sealed. Continue with the rest of the sausage mix and eggs.

Roll the meat-wrapped eggs into the flour, followed by the beaten egg and then breadcrumbs until evenly coated.

Spray the eggs with olive oil (as needed) then pop into the air fryer at 200°C. Cook for 20-22 minutes, until golden, crisp and cooked through.

Serve with a dollop of mustard, if you’d like.
