Pour the focaccia mix (1 pack) into a large bowl, add 400ml of water and mix well. Grease another mixing bowl with 20ml of olive oil, then transfer the sticky dough to the oiled bowl. Cover with a clean towel and leave to rest for 1 hour.

Fold the dough 4 times, then cover. Repeat this folding process 3 more times, resting the dough for 1 hour between each set of folds.

Pop the dough into a 30cm x 20 cm baking tray, greased with olive oil and carefully push it into the corners. Using your fingertips, make deep holes in the dough, careful not to go all the way through. Sprinkle with sea salt flakes and leave to rise for 45 minutes before baking.

When you are ready to bake, preheat the oven to 220°C/ 200°C fan/gas mark 7. Drizzle the focaccia with the garlic olive oil (1 tbsp), and bake for 20-25 minutes, until golden brown.

Cook the merguez sausages (1 pack) under the grill for 12-14 minutes, until cooked through.

Meanwhile, make the salad. Add the thinly sliced fennel (1) to a mixing bowl with the lemon juice (1) and sumac (1 tsp). Season with salt and pepper.

Once the focaccia has cooled for at least 10 minutes, slice into 6 pieces and cut in half. Mix the harissa (1 tsp) into the houmous (1/2 tub) and spread over the focaccia. Slice the sausages lengthways and pop on top, followed by plenty of the fennel salad. Season with a pinch of salt and enjoy.
step 7 Once the focaccia has cooled for at least 10 minutes, slice into 6 pieces and cut in half. Mix the harissa (1 tsp) into the houmous (1/2 tub) and spread over the focaccia. Slice the sausages lengthways and pop on top, followed by plenty of the fennel salad. Season with a pinch of salt and enjoy.
