Puff pastry traybake quiche recipe

Recipe
This puff pastry quiche recipe is packed with bold flavour, and it’s no fuss to make. There’s nothing like tender broccoli florets coated in extra-mature cheddar cheese, especially when it’s loaded into golden, flaky puff pastry.

Method

step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a baking tray with greaseproof paper. Unroll the puff pastry (1 sheet) and lightly score a 2cm border around the edge of the pastry, careful not to slice all the way through. Lightly prick the centre rectangle with a fork and pop into the oven to bake for 10-15 minutes, until golden.
step 2
Meanwhile, whisk the eggs (4) and cream (80 ml) together in a bowl. Stir in the broccoli (150 g) and cheddar (100 g), then season generously with salt and pepper.
step 3
Remove the puff pastry from the oven and spread the inner rectangle with the chutney (2 tbsp).
step 4
Top with the cream and broccoli mixture. Pop back into the oven to bake for another 10-15 minutes, until the mixture has set and the broccoli is tender. Serve with more tomato chutney, if you’d like.
