Method

step 1
Preheat the oven to 220°C/200°C fan/gas mark 7 or the air fryer to 200°C. Add the tacos (4) to a lined baking tray, and brush with olive oil. Bake for 5 minutes and then flip over. Bake for another 5 minutes, until golden and crisp. Alternatively, cook in the air fryer for 2.5 minutes on each side.
step 2
Add the finely sliced cabbage (1/4) to a bowl with the lime zest, lime juice (1) and coriander (20 g), saving a small handful to serve. Season with plenty of salt and pepper and then scrunch together.
step 3
Heat a large frying pan with 1 tbsp olive oil over a medium-high heat. Add the defrosted prawns (200 g) followed by the cajun seasoning (2 tbsp). Toss well to coat, and cook for 4-5 minutes, until the prawns are pink and cooked through. Season with salt and pepper.
step 4
Top the tostadas with guacamole (1 tub), cabbage, prawns and tomato salsa (1 tub). Top with extra coriander, if you’d like.
