step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Halve the peppers (4) lengthways, removing the seeds but keeping the stem intact. Pop onto a lined baking tray, and drizzle with 1 teaspoon of olive oil. Bake for 15 minutes, until soft.

Meanwhile, fill a large saucepan with hot water and bring it to the boil. Add the orzo (250 g) and cook for 6 minutes, according to packaging instructions. Once cooked, drain and leave to one side.

Add the olives (3/4 tub), parsley (25 g), cooked orzo and tapenade (4 tbsp) to a mixing bowl. Mix well and season with salt and pepper, to taste.

Add the orzo mixture to the peppers, then top with the feta (1 tub). Change the oven to a high grill, and grill the peppers for 10 minutes, until golden brown.

Serve alongside a rocket salad (as needed), with plenty of balsamic drizzle (to taste). Keep any leftover filling for another day, or serve on the side.
