milk
1/4 tsp
vanilla essence
3 drops
red food colouring gel pen

Preheat your oven to 180°C/160°C fan/gas mark 4 and line a large baking tray with baking paper.

Cream the butter (120 g), light brown sugar (75 g) and golden caster sugar (75 g) together until it is light in colour and fluffy, using a handheld mixer or stand mixer. Then beat in the egg (1) and vanilla (1 tsp).

Sift in the flour (180 g) and add the bicarbonate of soda (1/2 tsp), chocolate (150 g) and ¼ tsp of salt to the mixture.

Scoop the cookie dough, using an ice cream scooper, and drop it onto the prepared baking tray leaving enough space in between each cookie. This should make 10 cookies.

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are slightly toasted and soft in the middle (they will continue to cook slightly once removed from the oven).

Leave the cookies to cool for 5 minutes before transferring to a wire rack then leave to cool completely.

Whilst the cookies are cooling down, make your pink buttercream icing. Beat the butter (140 g) in a large bowl until it is soft, then start to add in half of the icing sugar (140 g) and beat until smooth.

Add the remaining icing sugar (140 g), milk (1 tbsp) and the vanilla essence (1/4 tsp) and beat the mixture with a whisk until it has a smooth consistency. You can add more milk if necessary. Add a drop of red food colouring (3 drops), one drop at a time, then mix until it turns to a lovely pale pink colour, this should only take a few drops.

Once the cookies have cooled, begin decorating. Add a dollop of icing to each cookie and smooth down with the back of a spoon. Sprinkle over the Percy pig sprinkles (as needed) with as much as you’d like and top each cookie with a Percy pig (as needed).
