Blood orange and kefir rice pudding

Recipe

This is a classic rice pudding recipe, with a twist. The marmalade adds richness and texture, while using kefir instead of double cream adds a tartness that pairs beautifully with vibrant and zesty oranges. For extra texture, crunch and that little bit of sweetness, chopped chocolate-covered pistachios are just the answer.

step 1
Add the milk (500 ml), rice (100 g), sugar (2 tbsp), cardamom (5) and cinnamon (1) to a medium saucepan. Bring to a boil, then reduce to a simmer and cook gently for 25 minutes, or until the rice has absorbed most of the milk. If it’s still not cooked, add a splash of water and continue cooking for a further few minutes.
step 2
Stir through the marmalade (2 tbsp) and remove the cinnamon and cardamom pods. Remove the rice from the heat and allow it to cool, before stirring in the kefir (100 ml) and orange zest (3).
step 3
To serve, top with the orange slices and scatter over the chocolate pistachios (100 g).
