Add the double cream (150 ml) to a bowl with the espresso (30 ml), liqueur (50 ml), brown sugar (1 tbsp), mascarpone (125 g) and vanilla bean paste (1 tsp) and whisk well until soft peaks form.

Heat the pancakes (375 g) according to pack instructions, in the microwave for 2 minutes.

Add the chocolate hazelnut crème (150 g) to a microwaveable bowl and melt in 30 second intervals, stirring until melted. Spread the Italian chocolate hazelnut crème and then fold in half, load up with more hazelnut crème, then fold in half again to form triangles. Top with plenty of coffee-spiked double cream.
