Preheat the oven to 200°C/ 180°C Fan/gas mark 6. Pour the cream (600 ml) into a pan. Add the honey (2 tsp), nutmeg (1/2 tsp) and thyme (3 sprigs). Bring to a simmer, remove from the heat and leave to infuse while you prep the parsnips.

Slice the parsnip (1 kg) into thin rounds and add to the cream. Simmer for 2-3 minutes, Remove the thyme from the pan and add the parsnips and cream mix to an ovenproof dish.

Top with truffle cheddar (50 g) and thyme leaves. Bake for 45-50 minutes until the parsnips are tender and the top is golden brown.
