Preheat the oven to 200°C/180°C fan/gas mark 6. Halve the sprouts (500 g) lengthways and remove any tough/tired leaves. Place on a lined baking tray with a drizzle of olive oil, salt, pepper and za'atar (1/4 tbsp).

Roast for 30 minutes until the sprouts are tender and caramelised.

While the sprouts are cooking, put the yogurt (1 tub) into a bowl along with the garlic (2 cloves) and 1 tbsp olive oil. Stir to combine and season generously with salt and pepper. Add the yogurt to a larger plate or platter.

Remove the sprouts from the oven and place on top of the yogurt, followed by pomegranate (4 tbsp) and dukkah (as needed). Finish with a drizzle of lemon-infused olive oil (as needed) and serve with warm flatbreads (4).
