Place the sugar (50 g), white wine vinegar (150 ml), sea salt (1/2 tbsp) and orange zest (1/2) in a pan along with 100ml water. Cook over a gentle heat until the sugar has dissolved. Remove from the heat and allow to cool.

Put the blackberries (360 g) in a sterilised jar and pour over the cooled pickling liquid. Leave in a cool place for a few days to allow the flavours to mature (leftovers are great on a cheeseboard).

Preheat the grill to medium. Cut the baguette (3/4) at an angle into 12 thin slices and place on a baking tray. Drizzle both sides with olive oil. Place under the grill and cook until crisp and golden, turning halfway through.

Crumble the goat's cheese (75 g) over the crostini and top with the blackberries, thyme (2 sprigs) leaves, some cracked black pepper and a drizzle of olive oil.
