Bring a pan of water to the boil. Blanch the broad beans (200 g) and peas (90 g) until tender.

In a small bowl, dress the crab (200 g) with lemon juice (1), olive oil (1 tbsp) and chives (1 handful). Set aside.

Add the crème fraiche (100 g), eggs (2), lemon zest (1), self-raising flourr (125 g) and milk (100 ml) to a large bowl. Mix to form a smooth batter. Fold in the broad beans, peas and parsley (1 handful) and season with salt and pepper.

Heat 1 tbsp vegetable oil in a large frying pan. Drop spoonfuls of the fritter mix, cooking in batches until golden brown on each side.

Poach the eggs (4) to your liking and heat the hollandaise sauce (1 pack) according to pack instructions.

Serve the fritters topped with the crab meat, poached eggs and hollandaise, and serve the lemon wedges (1) and watercress (80 g) on the side.
