To make the sugar syrup, heat the water (30 ml) and sugar (30 g) together until the sugar has dissolved, then leave to cool before using.

Add the rum (50 ml), sugar syrup, lime juice (30 ml), strawberries (10) and ice cubes (as needed) into a blender and blend until smooth.

Pour into a cocktail glass and garnish with a slice of strawberry (as needed).

Preheat your oven to 200°C/180°C fan/gas mark 6.

Using a small heart-shaped cutter (if you have one), cut the puff pastry (1 pack) dough into hearts. If you don’t have a cutter, you could always make them square or improvise a shape.

Pop the hearts on a parchment-lined baking sheet. Carefully run a knife around the edge of the hearts to make a heart within a heart. Use a fork to pierce the middle of each heart.

Mix together the egg (1) with milk (1 tsp) and brush around the outside edge of each tart.

Add your ricotta (125 g) and icing sugar (40 g) to a bowl and mix together. Carefully spoon the ricotta mixture onto your tart.

Bake for 15-20 minutes until your tarts puff up and there are no soggy bottoms. Cool on a rack and garnish with sliced strawberries (as needed) and a final sprinkle of icing sugar. Enjoy with all your loves.
