step 1
Quickly pickle your diced red onion (1/2) by combining with the white wine vinegar (10 ml), juice of half a lime (1/2) and a pinch of salt. Set aside.

Put a frying pan over a medium heat with a small splash of olive oil. Remove the sausage meat (6) from its casing and fry in the pan until nice and crispy, breaking it up into small pieces. This should take around 5-10 minutes.

Turn down to a low heat, then add the chopped garlic (2 cloves), green Thai curry paste (1 pot), sugar (1 tsp), soy sauce (1 1/2 tbsp) and juice of the other half lime (1/2). Fry on a low heat for five minutes. Add the finely chopped mint (1 handful) and coriander (1 handful).

Time to assemble your cups. Spoon the crispy pork into the lettuce cups (1) and top with your pickled red onions, sliced red chilli (1) and herbs. Finish with the crushed peanuts (50 g).
