step 1
Mix the beef mince (500 g) with the harissa paste (1 tbsp) and ½ tsp of salt. Roll into 12 small barrel-shaped koftes.

Heat a frying pan with a little olive oil, then add the koftes. Cook for 8-10 minutes so that the outsides caramelise and they take on an even colour.

During the last 2 minutes, make the sauce by adding the easy cooked onions (1/2 jar) and 3  tbsp water (plus extra harissa if you like it spicy) to the pan.

Top each pitta (4) with 3 koftes, the sauce, a spoonful of extra-smooth houmous (1 pot) and some shredded iceberg lettuce (1).
