Preheat the oven to 200°C/180°C fan/gas mark 6.

De-stone and halve the peaches (4) and arrange in an ovenproof dish in a single layer. Form the marzipan (75 g) into eight balls and place in the centre of each peach half.

Drizzle over the honey (2 tbsp) and pour over the sherry (50 ml).

Bake for 20 minutes, until caramelised and soft.

Serve with the amaretti biscuits (8) crumbled on top and a dollop of mascarpone (100 g).
