For the sauce

Season the halibut fillets (2) liberally with salt and pepper. Add 1 tbsp of neutral oil to a large, non-stick frying pan over a medium-high heat. Once the oil is hot, add the fish and cook for 8-10 minutes, flipping once. Remove from the pan and set to one side.

Reheat the frying pan over medium heat, add the onions (2 tbsp) and cook for 3-4 minutes, then add the garlic (2 tsp) and chopped preserved lemon (1) and cook for a further minute. Then season with salt and pepper.

Dissolve the flavour pot (1) in 250ml of boiling water and add to the pan with the onions, garlic and lemon. Simmer for 5 minutes until it begins to thicken.

Add in the butter (1 slice) and stir for a minute, to let it melt. Add the cream (75 ml) and parsley (1 handful) (save a small amount to garnish), then simmer the sauce for 5 minutes.

Add the fish back into the pan and generously coat it with the sauce and let it heat through whilst you prepare the potatoes and veg.

Heat the mashed potatoes (1 pack) in the microwave for 5 minutes then the vegetable mix (1 pack) for 3 minutes.

Add the mash to the plate and top with the fish and the veg on the side and spoon over the creamy sauce and sprinkle with a little parsley to garnish.
