Prick the potatoes (4) all over with a fork and rub with oil. Sprinkle with sea salt. Place in the air fryer and cook at 200°C for 40 minutes, turning with tongs halfway through, until tender (air fryer cooking times may vary).

Once cooked, remove from the air fryer and halve then allow to cool slightly. Carefully scoop out the flesh and combine with the spring onions (1 bunch), sour cream and chive dip (150 g) and cheddar (100 g), mashing together with a fork. Season with salt and pepper.

Spoon the filling back into the potato skins, pressing it down. Top each with a slice of prosciutto (4 slices).

Carefully place back in the air fryer and cook at 180°C for a further 10-15 minutes, until the filling is golden and the prosciutto is crisp.
