Preheat the oven to 180°C/160°C fan/gas mark 4. Arrange the potatoes (800 g) and garlic bulb (1 bulb) on a large, flat baking sheet, season with salt and pepper and drizzle with olive oil. Cover with foil and bake for 30 minutes, until tender.

Meanwhile, melt the butter (100 g) in a small saucepan over a medium heat until it smells nutty and is slightly brown in colour. Stir in the capers (1 tbsp), anchovies (1 tin), the lemon zest (1), and the juice of half the lemon.

Remove the potatoes from the oven, squeeze out the roasted garlic cloves (discarding the skin) and stir through the potatoes. Pop the cod fillets (4) on top and pour over half the anchovy butter. Season with salt and pepper, and return to the oven for 15 minutes, until the cod is cooked through and the potatoes are golden.

Squeeze the remaining lemon juice over the watercress (100 g) and toss in a little olive oil.

When you’re ready to serve, gently warm the remaining garlic and anchovy butter and pour over the fish and scatter over the parsley (1 handful) and serve with the lemony watercress.
