Sift the flour (110 g), cinnamon (1 tsp) and a pinch of salt into a large bowl. Make a well in the centre and crack in the eggs (2), gradually whisking them in with an electric or balloon whisk.

Mix the milk (200 ml) with 75ml water and gradually whisk this into the batter, until you have a completely smooth, lump-free consistency.

Melt the butter (50 g) in a large (24cm) non-stick frying pan. Remove 2 tbsp and stir into the batter mix. Pour the rest into a bowl and use to grease the pan to cook the crepes.

Heat the butter (30 g) in a separate frying pan over medium heat and add the pears (4), sugar (1 tbsp) and cinnamon (1/2 tsp). Cook, tossing regularly, for 10-15 minutes, until golden brown and caramelised.

Meanwhile, place the large pan used to melt the butter over a medium-high heat. Add a little of the melted butter and then spoon a ladleful of batter into the pan, swirling quickly so it covers the base (spoon extra batter over to cover any gaps). Cook for around 1 minute, until golden, then flip and cook for a further 30 seconds. Continue with the remaining batter, adding more butter as needed. Feel free to pop the pancakes underneath a clean, damp towel to keep them warm.

Serve the crepes with the caramelised pears and chocolate sauce (2 tbsp) drizzled on top.
