First make the garlic breadcrumbs. Stir together the breadcrumbs (4 tbsp), ½ tsp chilli flakes (1/2 tsp) and ½ the lemon zest (1). Season with salt and pepper. Heat large sauté pan over a medium heat and add 2 tbsp garlic oil (2 tbsp). Cook, tossing now and again, for 4-5 minutes, until the breadcrumbs are golden. Set aside and wipe out the pan.

Bring a large pan of salted water to the boil. Roughly chop the broccoli (200 g) and add to the pan. Cook for 4 minutes, or until just tender.

Meanwhile, heat the remaining garlic oil (2 tbsp) in the sauté pan and add the anchovy (8) and remaining chilli flakes (1 1/2 tsp) and lemon zest (1), sizzling for 1-2 minutes until the anchovies start to melt slightly.

Use a slotted spoon to remove the broccoli from the water and stir it into the garlicky anchovies, pushing slightly with the back of a wooden spoon to help them break down. Don’t worry if a little of the water gets into the sauce, this is a good thing!

Cook the pasta (500 g) in the water you made the broccoli in, for 8-10 minutes, or until al dente. Use a slotted spoon to drain into the pan with the broccoli, adding a splash of the pasta cooking water and tossing to create a glossy sauce.

Serve with the crunchy breadcrumbs on top and grated parmesan (to taste), if you like.
