Blitz the spring onion (4), parsley (1 bunch), coriander (1 bunch), garlic (4 cloves), onion (1/2), rapeseed oil (250 ml), lime juice (1) and sugar (1 tsp) with ½ tsp salt in a food processor until smooth. Taste to check the seasoning and acidity levels.

Toss 3 tbsp of the sauce with the mango (300 g). Decant the rest into a bowl.

Pan-fry the prawns (670 g) and heat the wholegrain and edamame (580 g) according to the pack instructions. Serve with the mango salsa and more of the green pepper sauce on the side.
