Add the za'atar (3 tbsp), peas (350 g), mascarpone (120 g), feta (200 g), eggs (2), flour (100 g), baking powder (1 tbsp), salt (to taste) and pepper (to taste) to a food processor. Pulse-blitz until the ingredients are well combined.

Pour the mix into a mixing bowl, add the crab meat (150 g) and lemon juice (1/2) and mix carefully, then season to taste.

Heat the oil (as needed), preferably in a deep-fat fryer to 170°C/325°F. If you don't have one, heat the oil in a deep-sided saucepan and test the temperature by dropping a breadcrumb into the hot oil. It should turn golden in about 25-30 seconds.

Take a tablespoonful of the mix and slide it into the oil, using another spoon to push the mix off if it helps. (Always work away from you when deep-frying.) Fry the fritters in batches until golden brown and remove from the oil using a slotted spoon. Place on kitchen paper and sprinkle with a pinch of za'atar. Serve hot with the roasted garlic mayo (to taste) on the side for dipping.
