Simply whisk up a simple batter mix with flour, salt and pepper, eggs and milk and rest in the fridge for an hour, or use our ready-made batter mix (1).

Preheat the oven to 200°C/180°C fan/Gas 6 and add the sausages (6), red onion quarters (1) and sprigs of rosemary (4 sprigs) to a hot tray along with some oil.

Cook until the sausages have browned and then pour in the batter.

Cook for a further 30 minutes or until the batter has risen and is golden brown.

Serve with gravy (350 g) and seasonal greens (200 g).
