This superb salad is simple to re-create at home. Our butternut squash has been roasted in rosemary and chilli and combined with roasted lemon, caramelised red onions, creamy feta, pomegranate and fresh sage, served with a fresh lemon dressing. Preparation Instructions: Follow the simple instructions to mix this salad at home. Gently mix by hand the butternut squash with the spinach. On serving plate lay out half of the butternut mix with half the pomegranate seeds and feta mix and repeat. Drizzle the dressing over the salad immediately before serving
