Preheat the oven to 220°C/200°C fan/gas mark 7. On a lightly floured work surface, roll out the puff pastry sheet (1 sheet) to 0.5cm thick. With the longest side facing you, sprinkle the Manchego (100 g) on top and evenly scatter over pieces of Ibérico (70 g), then use your rolling pin to lightly press the cheese and ham into the pastry. Season with salt and pepper. Pop into the fridge until cold.

Cutting from top to bottom of the pastry, slice into 12 short strips. Carefully twist each pastry strip by twisting each end in the opposite direction, until you have a curly straw shape.

Add the twists to a large baking sheet and brush with the beaten egg (1). Bake for 15-20 minutes, until golden and crisp.
